Bacon Wrapped Onion Rings

Yesterday, I teased (okay blurted out in all caps) that I had an awesome bacon wrapped onion ring recipe for you today. Well, here it is! I really should have held it for a Side Dish Sunday, but BACON. If you’re trying to figure out what to bring to a 4th of July cookout next weekend, I’d recommend giving this a shot. It’s easy to prep, but does take a bit of time to cook, so plan accordingly.

Slice several sweet (Vidalia) onions in 1/2″ slices. Count on 1/2 to 1 onion per person.

Separate the slices into individual pieces, keeping two pieces per ring. Set the smallest rings aside for another purpose (or add them to your stock bag).

Brush the rings with your favorite hot sauce. We used Frank’s Hot Sauce, but Sriracha would work well also.

Wrap each ring with bacon. You’ll need about three slices of bacon per ring.

Skewer the bacon wrapped onion ring with a wooden skewer and sprinkle with black pepper.

Place the skewers on the grill over indirect heat. Cook, turning occasionally, until the bacon is crispy. Alternately, you can cook these in the oven at 250 for about an hour and finish them on the grill.

Now please excuse me while I put on my running shoes and try to sweat off the three vacation pounds I gained.
