Chicken Saltimbocca

The plan was to make this on Sunday. I took the chicken out of the freezer after I returned home from picking up the groceries around 10 and put it on the counter to start thawing, asking M to please remind me the chicken was out. About an hour later M suggested we head to Georgetown to do some furniture browsing. We stopped at Good Stuff Eatery, a bucket list place, grabbed a milk shake and side of fries and spent the next few hours in and out of the various shops along M Street. Wanting to cross an item off my Summer bucket list, I convinced M to go to the waterfront for a cocktail. No sooner did my glass of wine appear than I remembered the chicken…still on the counter, almost six hours later. Into the trash it went. I was frustrated with myself because it wasteful, but cut myself a little slack since I had purchased it as part of a buy two, get three free promotion. So, it’s not like I had shelled $10 out for it, but still. Grrrr.

After properly defrosting a new package of chicken in the fridge, we were able to enjoy this chicken saltimbocca dish last night. It’s a gourmet-looking meal that is as easy as can be. If you can make a sandwich wrap and scrambled eggs, you can make this dish. I love the way the salty prosciutto crisps up to almost form a crust on the chicken. The sauce coats the chicken with a lusciously rich tasting sauce contrasting the salt prosciutto. And, it’s on the table in 30 minutes looking like it took hours to make. Save this dish for when you need a date night at home or want to impress someone!

Begin by slicing chicken breasts crosswise and pounding chicken breasts to 1/4″ thick (mine are a little thicker). Alternately, you can purchase chicken tenderloins at the grocery store instead of pounding the chicken thin. Season both sides with salt and pepper.

Top each piece with two sage leaves.

Wrap each piece crosswise in proscuitto.

Lightly dredge in flour. Heat tablespoon of oil over high heat and add half of the chicken.

Cook 3-4 minutes per side until the chicken is cooked through. Set aside and tent with foil to keep warm. Repeat with the other half of the chicken.

Once the chicken is cooked, add 1 cup of white wine and 1/2 cup of chicken broth to the pan. Bring to a boil.

Whisk in 3 tablespoons of butter and cook 1-2 minutes until thickened.

Return the chicken to the pan and coat both sides with sauce.

For the asparagus, bring a pot of lightly salted water to a boil. Cook 2 minutes and then remove from water. Add asparagus to the sauce and toss to coat. Plate asparagus and chicken and top with additional sauce.

  1. 2 lbs boneless skinless chicken, pounded to 1/4" thick

  3. 12 sage leaves
  4. 6 pieces of proscuitto
  5. 1/4 cup flour
