Cooking Pinterest: Man-Pleasing Chicken

This wasn’t the first time I’ve made “Man-Pleasing Chicken” (and yes, this is different than my man’s chicken). It’s easy, it’s cheap, and it’s fast. However, do not forget the most important step of this dish, like I did. LINE YOUR DISH WITH FOIL. If not, please enjoy two days of soaking and one hour of scrubbing burned on sugar off your brand new Pyrex dish.

Combine 1/2 c dijon mustard, 1/4 c total of maple syrup and honey and 1 tablespoon of white wine vinegar.

Line a 8×8 baking dish with foil. Repeat: line the dish with foil. Place boneless, skinless chicken thighs in the dish. Season with salt and pepper.

Pour on the mustard mixture.

Turn to coat.

Bake in the oven for 30-40 minutes at 450. Baste with sauce halfway through cooking. Remove from the oven and let rest 5 minutes. Realize that you forgot to line the dish with foil.

Sprinkle on some fresh chopped rosemary and serve with vegetables.

Original recipe here. Note, I used maple syrup and honey instead of all maple syrup and white wine vinegar instead of rice vinegar since that’s what I had in the pantry.
