Greek Chicken Pita Pockets with Homemade Tzatziki

I’m the kind of person who can’t eat the same thing two nights in a row. Repackage it into a different meal, though, and I’m all for it. That’s why I enjoy my cook once, eat twice recipes so much. Sure, the protein is the same but it’s repackaged in a new and different way. These pita pockets are a great example of that. I used leftover greek seasoned beer can chicken, combined it with a fresh, homemade tzatziki sauce, fresh vegetables all stuffed into a pita pocket for a easy weeknight dinner. The tzatziki should be made ahead of time to allow the flavors to develop — making it while the chicken roasts means only one night of clean-up too!

On the large side of a box grater, shred one cucumber.

Add two minced garlic cloves, and squeeze the juice of one lemon into the cucumber.

Add in two cups of greek yogurt. Season with salt and pepper and stir to combine.

Chop a bunch of dill and add to the sauce. Stir and cover, refrigerating until ready to use.

For the sandwiches, spread one pita pocket with tzatziki. Top with thinly sliced cucumbers.

Fill with feta, halved cherry tomatoes and chicken (warm or cold).

Ingredients
  1. One cucumber, grated
  2. 2 garlic cloves, minced
  3. 1 lemon, juiced
  4. 2 cups of greek yogurt
  5. 1 bunch of dill, chopped
  6. Salt and pepper
