Greek Seasoned Beer Can Chicken

My spicy beer can chicken is one of the most popular recipes I have on the blog. It’s been pinned and repinned several hundred times. Rightfully so; the chicken is juicy and tender thanks to the beer and the seasoning rub is spicy without being overpowering. I decided it was time to create another version of beer can chicken. For this version, I stuffed the skin with butter, greek seasoning and lemon slices. The outside of the chicken is also seasoned with greek seasoning, resulting in a tender chicken with hints of lemon, cinnamon and oregano. The leftovers are fantastic on their own — or stuffed into a pita pocket, which I’ll show you tomorrow!

Combine two tablespoons of greek seasoning (make your own with this recipe) with one and a half tablespoons of softened butter. Stir to combine.

Loosen the skin of the chicken. Under the skin, place half of the butter mixture and a few slices of lemon. Repeat on the breast side of the chicken.

Season the outside of the chicken with greek seasoning, salt and pepper.

Place 1/2 a can of beer in a roasting pan. Add two teaspoons of greek seasoning and two cloves of garlic into the beer.

Next, place the chicken onto the beer. Here’s a tip: if you have a springform pan with a removable bundt cake insert, the can should fit in the middle of the insert. It’s a fantastic way to make sure your chicken won’t topple over in the oven. Or, you can use one of these fancy beer can chicken racks. Place the chicken in the oven and cook at 425 for one to one and a half hours.

The chicken should be an internal temperature of 165 degrees.

Carefully remove the chicken from the can and let it rest for 5 minutes before cutting.

  3. 5-6 pound chicken
  4. 1 lemon, thinly sliced
  5. 1 can of beer
