Grilled Salmon with Raw Red Pepper Pesto

I’m not sure what better encapsulates what I want to eat during the Summer: something from the grill, a fresh pesto, or a dish that’s on the table in less than 15 minutes. Last night, I didn’t have to pick. Using jarred roasted red peppers (homemade would also work), this pesto comes together in seconds. The salmon cooks easily on the grill (or, like me, in the grill pan) and is simply seasoned with salt and pepper. To round out the dish, any vegetable side would work. I chose sauteed spinach kissed with a little lemon zest and then squeezed lemon juice over the entire dish.

Tear one and a half jarred roasted red peppers into chunks and place in a blender or mini food processor. Add a tablespoon of tomato paste, one teaspoon of olive oil, one garlic clove and a small handful of nuts. I used slivered blanched almonds (pantry cleanout), but pine nuts or walnuts would also work.

Run the food processor until the pesto reaches the desired consistency. Season with salt and pepper and set aside.

Generously season two salmon filets with salt and pepper.

Heat the grill or grill pan over medium-high heat. Spray with cooking spray or brush with olive oil. Place the salmon on the grill and cook until the edges begin to change color (about 4 minutes depending on the thickness). Carefully flip the salmon and cook 4 minutes on the other side, or until the salmon reaches the desired doneness.

Remove the salmon from the pan and top with red pepper pesto.
