Grilled Vegetable Tacos

One of the best parts of Summer is being able to throw a bunch of vegetables on the grill and call it dinner. The grilled vegetables take a few minutes to prep and cook, but the result is a healthy, build your own taco bar with perfectly grilled vegetables accented by the slightest bit of spice. The tacos can be enjoyed on corn tortillas, as we did, or in a lettuce wrap for a low-carb version.

Begin by slicing your zucchini into rounds. Skewer the zucchini, mushrooms and grape tomatoes. Slice a red onion into thick rounds and peel corn.

Place everything on a baking sheet for easy carrying and drizzle with olive oil.

Combine dried oregano, chili powder, cumin, and onion powder in a small bowl.

Sprinkle the vegetables with the spice mix and place on the grill (or griddle if you have to cook indoors like me). Cook the vegetables to the desired doneness.

Remove the vegetables from the grill, remove the skewers where necessary and chop. Arrange on a platter.

Serve the tacos with warmed corn tortillas and taco toppings.

Ingredients
  1. 1 zucchini, sliced into rounds

  3. 1 red onion, sliced into 1/2" thick rounds
  4. 1 package of grape tomatoes
  5. 1 ear of corn, husk removed
  6. 1 avocado, halved
  7. 1 red pepper
  8. 1/2 tbsp oregano
  9. 1 tbsp chili powder
  10. 1/2 tbsp cumin
  11. 1/2 tsp onion powder
