Lemon Spinach Pasta

This recipe originally came from my Mom. Whether she found it or made it up, I’m not sure. I first made it last Summer and M and I were both kind of “Eh” on it. I decided to give it another try, making some tweaks to suit our taste buds, and man was it good.

The original recipe does not call for chicken, but as part of my latest Pantry Cleanout attempt, I had two chicken tenderloins in the freezer that I was at a loss for what to do with. I quickly poached it in some chicken broth and then shredded it in the stand mixer. Feel free to leave this out if you don’t have leftover chicken, or grill off a chicken breast or two if that is more your speed.

Cook pasta in salted water according to package direction. Reserve 1 cup of cooking water.

In a large skillet over medium low heat, add 2 tablespoons of olive oil. Add in minced garlic, lemon zest, and red pepper flakes.

Stir regularly until fragrant and garlic is softened.

Add in 2 cups of fresh spinach (not baby or frozen spinach) chopped and chicken. Stir to combine.

Add in 3/4 c of chicken broth. Season with salt and pepper. Reduce to half.

Add in cooked pasta and the juice of one lemon. Add enough reserved pasta water to create a sauce. Sprinkle with grated cheese and black pepper. Stir to combine.

Serve with additional Parmesan cheese.

Ingredients
  1. 1 lb. spaghetti or linguine (whole wheat preferred), cooked, 1 c. salted water reserved
  2. 2 tablespoons olive oil
  3. 3-4 cloves of garlic, minced
  4. 1 lemon, zested, juice reserved
  5. 1 tablespoon red pepper flakes
  6. 2 cups fresh spinach leaves, chopped
  7. 2 cups shredded chicken (optional)
  8. 3/4 c. chicken broth
  9. Grated Parmesan cheese
  10. Salt and pepper
