Meal Planning – January 12-18

It’s the second full week of the Pantry Challenge. Our grocery spending is definitely down: we’ve only spent $64 this month, which includes $9 I spent randomly at Whole Foods last Saturday when I realized I didn’t have a single fresh vegetable to make as a side to my Turkey Cutlets with Lemon.

We have a ton of social events this week: Monday is our monthly anniversary date (more on that later this week), Tuesday we’re having drinks for a close friend’s birthday (which may turn into eating out) and M has an “Annual Steak Night” Wednesday with the boys, so I’m planning something I know he wouldn’t eat. We’re also crossing our fingers for my grandmother, but flexibility for our meals will be key.

Sunday: Orrechiette with Sausage and Tomatoes (this is a favorite in our house)

Monday: Date Night

Tuesday: Probably out, but Pasta with Olive Oil, Garlic, and Crushed Red Pepper if not

Wednesday: Roasted Vegetable Strudel

Thursday: Beer Can Chicken (trying again this week since it didn’t happen last!)

Friday: Pork Tenderloin with Seasoned Rub

Saturday: Korean Bulgogi

I’m also going to make a big batch of Crockpot Minestrone Monday during the day so that I have an easy lunch I can eat throughout the week.
