Side Dish Sunday: Fresh Summer Corn Cakes

Before corn season comes to an end, be sure to try this quick and easy corn cake recipe. If you can make a pancake, you can make these corn cakes! Try them as a side dish for these honey glazed pork chops for a quick and easy meal!

Ingredients
  1. 1/2 cup yellow cornmeal
  2. 1/4 cup all purpose flour
  3. 1 tsp baking powder
  4. 1/4 tsp kosher salt
  5. 1/2 cup low-fat buttermilk
  6. 1 egg
  7. 1 cup fresh corn kernels
  8. 2 tbsp green onions, chopped
Instructions
  1. Combine dry ingredients (through salt) in a bowl.
  2. Whisk together buttermilk and egg in a medium sized bowl. Stir in cornmeal mixture, fresh corn and green onions.
  3. Heat a non-stick skillet over medium heat. Add 1 tablespoon mounds of batter to a pan. Cook 2 minutes each side. Remove corn cakes from the pan and repeat until all batter is used.
