Slow Cooker Stuffed Peppers

As I mentioned when I posted my recipe for Slow Cooker Tomato Sauce, I have a Ninja 3-in-1 Cooking System. It makes slow cooker recipes where you have to saute or brown something before slow cooking a one-pot dish. It might be true love. Yesterday, I had a meeting that was supposed to be cancelled, uncancel. I was scrambling to finish the few small projects I could, get dressed (by some mystery I was already showered. That NEVER happens.), and drive the thirty minutes to my client’s office in an hour. Oh, and I needed to get dinner started. Luckily, I was already planning on making this slow cooker meal so all I needed to do was pop in and out of the kitchen at the correct intervals to get the preparation done. The original recipe is from The Italian Slow Cooker. I hadn’t made a single recipe out of the book yet, and I let M pick this one out.

First, I preheated my Ninja on Stovetop High. (If you don’t have a Ninja or slow cooker that browns, you’d do these steps on the stove top. Two pans. Whoop-whoop.) I find the Ninja preheats quicker when the lid is on it. Add in a splash of extra virgin olive oil and finely chopped carrots, celery and onion. I cheated and bought a prechopped moirepoix at Harris Teeter this week. I used 1/2 of a 10 oz package. Saute the veggies until softened.

Meanwhile in a small bowl, combine finely chopped proscuitto, panko breadcrumbs, parmesan cheese, parsley and salt and pepper.

Add 1/2 pound of ground turkey to your slow cooker and cook until browned, breaking it into small pieces. Throw in a splash of wine and let it cook down. Add the turkey and veggies to your breadcrumb mixture and stir to combine.

Switch your Ninja over to Slow Cooker Low and add a can of diced tomatoes to the bottom of the pot. Stuff your peppers with the filling, cover with the pepper top and add them to the slow cooker.

Cover the slow cooker and cook on low for 3-4 hours, or high 1-2 hours.

Ingredients
  1. 1 celery rib, finely chopped
  2. 1 carrot, finely chopped
  3. 1/2 onion, finely chopped
  4. 1/2 pound ground turkey
  5. 1/4 cup of white wine
  6. 1/2 cup panko bread crumbs
  7. 1/2 cup parmesan cheese
  8. 3 tablespoons parsley, chopped
  9. 2-3 slices of proscuitto, chopped
  10. 2 red or yellow bell peppers, cored, tops reserved
  11. 1 can diced tomatoes
  12. Salt and Pepper
  13. Extra Virgin Olive Oil
Instructions
  1. Preheated your Ninja on Stovetop High. Add in a splash of extra virgin olive oil and finely chopped carrots, celery and onion. Saute the veggies until softened.
  2. Meanwhile in a small bowl, combine finely chopped proscuitto, panko breadcrumbs, parmesan cheese, parsley and salt and pepper.
  3. Add ground turkey to your slow cooker and cook until browned, breaking it into small pieces. Add wine and allow it to cook off. Stir your turkey mixture into the breadcrumb mixture.
  4. Turn your Ninja to Slow Cooker Low and add a can of diced tomatoes to the bottom of the pot. Stuff peppers with the filling, cover with the pepper top and add them to the slow cooker.
  5. Cover the slow cooker and cook on low for 3-4 hours, or high 1-2 hours.
