Tortellini with Mushroom Sauce

Yay! Mushrooms! I actually had a dream last night where, while talking to friends about the (awesome) songs we used for our wedding, I was snacking on a colander full of marinated mushrooms. I might need help. Or more mushrooms.

Start by bringing a large pot of water to a boil. Dice one package of mushrooms. I used white mushrooms (on sale!), but any type of mushroom works in this recipe.

Thinly slice a few cloves of garlic. I used three.

Heat two tablespoons of olive oil over medium heat and add in the mushrooms and garlic. Stir until tender, about 7 minutes.

Add one cup of water and season with salt and pepper. Toss a bag of frozen cheese tortellinis into your boiling water and cook according to package directions (usually about 5 minutes).

Once the liquid has reduced by half, stir in a handful of chopped parsley and 1 tablespoon of butter. Once the butter has melted, add in your tortellini and stir to combine.

Top with lots of parmesan cheese and serve!

Ingredients
  1. 1 bag frozen cheese tortellini
  2. 2 teaspoons olive oil
  3. 8 ounces fresh mushrooms, diced
  4. 3 garlic cloves, thinly sliced
  5. 1 cup water
  6. Coarse salt and ground pepper
  7. 1 tablespoon butter
  8. 1/3 cup flat-leaf parsley, chopped
  9. 3 tablespoons grated Parmesan cheese
