What’s Cooking – February 16-23

I hope everyone had a fantastic Valentine’s Day! M and I celebrated Austin’s second birthday (tear) by completely spoiling him. He had steak for dinner, a birthday cookie and a few treats from our local dog store. We can’t wait to let him dig into them, especially the cheese wrapped bully stick. Oh my. I presented M with his Valentine’s Day gift before dinner — a Year of Dates. Each one is a pre-planned, pre-paid for activity that we can enjoy together. Some are things we’ve done before and some are things we’ve talked about doing but never got around to. I’m excited to see his reaction each month as he opens the “date card.” I figure if you are going to be romantic, Valentine’s Day is the day to do it.

We had dinner at Art & Soul Restaurant in DC. We’ve eaten there a few times before and it was our go-to stop when we were downtown doing wedding planning visits. Thursday night was our monthly celebration of our wedding. The snowstorm thwarted our original plans—a yoga class and chocolate tasting—so we cut out of work early and hiked up to the closest restaurant for an early happy hour.

In terms of our grocery spending, there was a ridiculous sale on meat when I went shopping. Ground beef for $1.99/lb, meatloaf mix for $3.99, chicken thighs for $2.77/lb, etc. I totally blew my grocery budget (again) by spending $110 but I won’t be buying much meat for quite some time. This week, our Culinary Challenge is Fried Chicken. We’re also bringing dinner over to our friends who recently had a baby, so I’m making a double batch of Thursday’s dinner; one for us and one for them.

Sunday: Spinach and Mushroom Enchiladas

Monday: Pan Grilled Lamb Shoulder Chops with Stuffed Zucchini

Tuesday: Peppers Stuffed with Turkey, Proscuitto and Cheese from The Italian Slow Cooker with Salad

Wednesday:  Pasta and Red Sauce

Thursday: Prosciutto Wrapped Chicken Thighs

Friday: Out

Saturday: Culinary Challenge Night – Fried Chicken
