Tonight is “Irish Night” in our house. It’s this week’s Culinary Challenge and it couldn’t have come at a better time. As I mentioned last week, M has a business trip. Well, flights finally dropped enough that I’ll be able to travel with him for the first part of the trip, but it means we’ll both be traveling on Saint Patrick’s Day. No problem! We’ll just celebrate it a week early. Tonight, we’ll be making corned beef (in the Crockpot), scalloped potatoes, and brussels sprouts. Since M will be out of town the next two weekends, I’m putting the Culinary Challenge on hold, but it’ll be back the 29th.
