Working It Out and What’s Cooking – February 1-8

That’s a wrap folks. January is officially one for the books. My goal for this month was to eat more out of the pantry and to spend less then $80/week at the grocery store. Success! I went $1 over this past week, but since I had to buy olive oil and vegetable oil ($13 total), I’m okay with it. Plus, I’m getting $.50 back from Checkout 51 for buying orange juice and $2.09 from SavingsStar (remember that post about finding free money? It’s real). When you subtract those refunds, I’m under budget! Out of pocket, we spent $298 on groceries or an average of $74.50 per week. After my rebates: $72.25. Win. And for those keeping track, I spent 40% of what I spent last month. Let’s keep this goal going in February…

This month, M and I have again agreed to focus on cutting some unnecessary spending, but this time he is making the sacrifice. M drinks Red Bull. Every. Single. Day. Sometimes, twice a day. Red Bull and a granola bar does not make for a healthy breakfast, and the $5.10 it costs at 7-11 does not make the wife happy. We’re averaging over $125/month on this garbage (sorry babe, I know you like it, but it’s garbage). So, the other day after he was nagging me that I need to go to the gym more, I came up with a compromise: for every day M does not drink a Red Bull, I will go to the gym. Game on February 1st.

Earlier in the month I also teased a little something about a new cooking challenge I’m going to task myself with for the next few weeks. I’ve been feeling stuck in a little bit of a culinary rut so when I saw “The Countries Game” on a blog, I knew I had to steal the idea. I cut up 12 pieces of paper and handed 8 to M and 4 to myself. On each we wrote either a dish (tacos, fried chicken, as examples) or a cuisine (Mexican, Soul Food). We tossed our 12 into a jar and each week I’ll be picking one slip out to incorporate into our meal plan. First up: British where I’ll be trying my hand at a beef wellington.

Here’s what’s on tap:

Sunday: Superbowl. We don’t have plans. What?

Monday: Ground Beef Gyro Lettuce Wraps

Tuesday: Baked Shrimp (from The Bon Appetit Cookbook)

Wednesday: Pad See Ew

Thursday: Chicken Braised in Wine with Rosemary

Friday: Beef Wellington (adapting this one)

Saturday: Out (actually, it’s a secret for now as to what we are doing, but I am cooking something!)
